Breakfast of champions

So side bar real quick, I am super super busy with work and a class I’m taking for work. It is rigorous and will require a lot of attention. That being said, I’m still going to blog about my food and my recipes, hoping to get back to the workouts beginning of February. Having gotten over covid I wanted to give my body a chance, and my finances, to recover before committing to a new routine and a new bill.

So! One of my favorite things is Mexican food. Tacos, burritos, chimichangas, you name it, I love it. So I started browning up some breakfast sausage accompanied by some onion and green peppers. Once that was cooked thoroughly and the peppers a little soft I add some scrambled up eggs and cook the eggs using the sausage grease. Throw that on a low carb wrap with some taco seasoned cheese, put it back on the pan with a little butter on each side and brown it up. I dunk it in salsa and it’s absolutely amazing and an easy breakfast option.
